REMON KARIAN
Owner & President
Remon Karian is known for his entrepreneurial spirit, his love to entertain and his passion for making others happy. Having an innate flair for business, it was apparent at a very young age that Remon was destined for great things. Born to an Armenian heritage, Remon grew up rooted in strong family values, interwoven with tradition and of course ~ delicious food!
Remon credits his inspiration to his father, Marcel, who began the family legacy with his own Italian restaurant, Café Fiorella, in Belmont. It was in his father’s kitchen that Remon, at the age of 13, discovered his ability and love for cooking while learning to make brick~oven pizza. Having started to work at such a young age, Remon witnessed first~hand not only how satisfying and rewarding the restaurant business was but also how demanding it is. At the age of 23, he combined the practical experiences and knowledge he had gained working in his father’s Café, with the business acumen that he learned from Bentley University to start his own venture ~ Fiorella’s, in Newton. It was the special bond of family, food, business and his love for hospitality that served as the key ingredients in the making of ~ Fiorella’s.
Now approaching it’s 10th anniversary, Fiorella’s has become known as the “Number 1 Italian Restaurant in Newton,” as well as the “Gold Regional Favorite,” voted by the “Reader’s Choice Awards, 2009.” Fiorella’s has become one of Newton’s gems with it’s delicious rustic food winning over hearts and palates far and wide. Fueled by his love for adventure, Remon is not afraid to explore, take risks and is constantly striving to improve and add new dimensions to his vision. With Remon’s dedication and innovative spirit, the future of Fiorella’s, will continue to shine bright.
EARL QUINN
Executive Chef
Earl is the star of Fiorella’s open~plan kitchen. Diners can see his talent at work as he skillfully juggles open flames while tossing quality ingredients in sauté pans, to make the perfect Fiorella’s dish. Having spent the majority of his childhood with the Italian side of his family, Earl Quinn credits much of his inspiration and skill in the kitchen to his late Sicilian grandmother. A native of Saugus, MA, Earl drew from the countless family events held at her home and began working at restaurants at the age of 13. Earl started cooking in a full~service restaurant by the age of 16 and by 19, he was running a kitchen in Nahant, MA.
In his twenties and early thirties, Earl worked as both a sous and executive chef in several different establishments across the country gaining the majority of his experience. He spent three years in Arizona working as an executive chef at an exclusive golf club, where his duties extended to weddings and banquets.
After moving back to Boston, Earl found it only natural to go back to his roots ~ in particular, his grandmother’s influence ~ and focus on Italian cuisine. When Remon Karian was searching for the perfect~fit chef to take charge and carry out his own Italian inspired cuisine and vision, he contacted his old friend and former colleague, Earl Quinn and the rest, as they say, is history. Having been at Fiorella’s for 5 years now, Earl has played a key role in Fiorella’s success, in both the delicious food it serves and the tradition it represents.
MARY CARRESI
Manager
Mary Carresi is Fiorella’s manager, as well as represents the warm motherly figure associated with an authentic Italian kitchen. Mary’s earliest childhood memories were of her large Italian family always gathering to enjoy delicious cooking. Born to Italian immigrant parents, Mary was raised with a rich Italian heritage and a love and knowledge for the cuisine, from a very young age.
Once Mary had raised her own three children, she decided it was a natural fit to pursue a career in the hospitality industry. She found a passion (in true Italian “mama” essence) in taking care of others needs, giving her great pleasure and satisfaction. After spending years hosting many dinner parties for friends and relatives, she began working in Italian restaurants where she gained the bulk of her work experience in the restaurant industry. This eventually lead her into a career of restaurant management.
Mary joined Fiorella’s in 2005, and has become known by regular diners as Fiorella’s friendly and charming nurturing figure. Her innate sense of warmth, kindness and hospitality makes all of Fiorella’s valued customers, feel like they are at their home away from home. She adds a personal touch to the Fiorella’s experience and is loved by all who know her.
